In a zone, you can hide a low DEF guy a lot easier. In man to man, the low DEF guy will kill you against a competent coach. With that being said, I have had some success with low DEF guys off the bench. I had an All American at Princeton who had like like a 60 DEF but came off the bench and scored ~20 ppg.
Back to your original question, I don't have a minimum DEF score for bench players. If I know the guy will never start, I'll recruit a super low defensive player if he will be a very efficient scorer.
If I think he'll eventually be a starter, I am hard pressed to go below 50 in MM or Press or 40 in zone. In MM and Press, it's easier to swallow if he can play the 1-3. Moving him around on the least likely scorer is helpful but takes away your ability to attack his best defender.
