What times are the games played and can I make half time adjustments? Also how do I scout a opponents coach to see what he likes to do?

1st half of games sims at 2:30 am est.  2nd half sims at 2:30pm est.  You can make adjustments in that 12 hr. window.

Open up the oppositions team page, go to schedule, then review the PBP of previous games played.

Thanks man so for first game of the year should I look to last years game?

You can only see the current season's games, including any exhibition games played.  You can go by what a coach did during the exhibition games, though some coaches may try to hide what they'll do during these games.
