     my 5th non-conference game. The game ends up filling that game out, right? My question is, how does it decide this?

As far as I know, its just a randomly chosen SIM, outside of your conference with that open date.

Its a random opponent from out of the conference that has that date open. Most of the time it is a sim as most other coaches have already scheduled their non-conference games.
