So I have a WR that is mad he is not starting, I promised freshman start. But when I look at my deep chart, it shows him as a starter. Any other time, as long as the deep chart showed a player as a starter, it showed up in his stats too. But not this time. Thoughts?

In your first two games, Williams wasn't the starter (Andrews, Armstrong and Miller got the starts). You must have changed it after the second game. If Williams hasn't complained twice, and continues to start, he'll get most of the WE back.

See that is the issue. The depth chart showed Williams as the starter. Had the green checkmark next to his name.

Does your gameplan include a formation that includes him as a starter?  Your showing trips as your base set, but if you're running ND, WB, I or Pro in your gameplan and trips never gets chosen, and if he happens to be your 3'rd receiver in the depth chart, he won't get credit for the start.

I run only Trips and PS.

So going back to the first two games, the first play in each was ran out of the PS. So he didn't get the start. Stupid if you ask me, but I now know.
