I'm new to the game, can someone please explain what's the pro's and con's of offering a IFA a minor league deal with a $10M bonus, as opposed to offering him a 5yr Big Year deal at $2 per year?  If he doesn't have 3 years of ML experience at the end of the deal, he's still arbitration eligible isn't he?

There is only a con, because you cannot do this. You can offer a big league deal to an IFA, but only at $327,000 per year, and only for 3 years.
