If you inform a recruit about redshirting them and sign them, does that apply only to his freshman year? If you wait until Sophmore year, is he still guaranteed to accept a redshirt?

A sophomore may or may not accept a redshirt. By that time what he said when you were recruiting him may be an indication but is certainly no guarantee.
