I'm assuming these OL #'s do not match the numbers assigned in Formations (under coaching)?

Yeah, the Dev guy meant to say 3, 4 and 5 (the inside OG/C's). I think he clarified it later in the dev chat. Also FWIW, I think DE (outside linemen) on defense have a greater role than implied, but that is my personal opinion.

They used to be numbered in order, but at one point after 3.1 was rolled out, they switched it. OL2/3/4 used to be LG/C/RG. They are now OL4/3/5 in order.
