If you want to add a team option to a LT offer to a current player in-season (when accept/deny happens immediately), what do you generally have to offer above what the player is asking to get them to accept a Team Option (not mutual).

Nothing. Usually options are tiebreakers when competing for free agents. In this case, it sounds like you are trying to sign a free agent during the season, so it won't matter. In my opinion, mutual option is a better choice, especially if the player is somewhat of a question mark.
