I panicked a little during recruiting and signed a couple players without scouting to reveal their potential. Is there any way to find their potential at this point?

There isn't a way. You can just try to gauge it off of growth now.

If you have money left, and recruiting isn't over, can you still send an AC scout?

No, not if the player is signed already.

Try reloading the recruiting season in question in yatzr's tool. It'll work if you have the right jar file saved, but if you don't you can't recover the mail responses to establish potential.
