Okay, so these two positions are the only ones that seem clearly interchangable to me. So who do you put where? The 'league averages' that the sim bases its error rate and plus plays off of has higher fld and rng rating for the CFer, but I think I would rather have the better of two players at 2nd.

2B gets more opportunities.   That said, you can't just say what's "better".     Assuming same arm, I'd put a 91/74 in CF if my other option was 83/74.  Range in CF, glove at 2B.

Plus, as cjlancaster points out, you don't want a LH2B, while there's no problem with a LHCF.  So the two are not always "clearly interchangable".

Could you put a lefty at 1B?  A handful of lefties play first in the majors... not sure if WIS is kind to LH 1b.

Of course you can put a lefty at 1B. The only reason that they cannot play the other IF positions is the throw. HBD has quite a few LH 1B.

Aside from this being a terrible reason to select you 2B and CF.....

Lefties actually have a slight advantage at 1B when it comes to the ol' 3-6-3 double play.... so... uh...... yeah.  Feel free.

Being LH is advantageous for 1B for holding runners. The glove is on the bag side while facing the pitcher. For turning a 3-6-3, there is far less turning to throw and run back to the base for a lefty.
