Where can I check how much longer a guy has on his contract? I haven't been able to find it.

You can also go to the GM screen and view roster / status info that will list all of your players and when they are signed through - its the second to last column on the right.

Yes, but that won't tell you if the last season of the contract has an option or not.  It assumes the last season is fully guaranteed.
