Would be much more realistic
More realistic? Yes. But would you want to be the one responsible for responding to customer service complaints after this goes into effect? Everybody and their uncle would bombard site staff to no end as soon as their 1st round pick goes bust for no good reason.
And to make that truly realistic, the vast majority of 1st, 2nd and 3rd rounders would never sniff the majors, just like real life. All while the number of 18th, 22nd and 25th rounders who become Hall of Famers would have to increase dramatically. (I know this goes beyond what you're suggesting, but my original point still stands...people would raise hell.)
Plus, it would make ranking your draft preferences a somewhat pointless waste of time, knowing there's a very real possibility that my 1st rounder could end up being terrible, even if he stays healthy, while my round 24 afterthought long reliever could turn into Nolan Ryan.
