It depends on how much hitting has been sacrificed and how good the pitching is. You're not going to win every game 1-0.

If you built this sort of team would you put them in a hitting park or pitching park?

Normally I'd attempt to accentuate my strengths but, in this case, I'd go with a slight hitter's park. If I knew I was going to sacrifice hitting to build some super defense, I'd look for an offensive advantage and let my + plays take it away from the other team.

I'm not sure how much you expect them to suck. I'll be surprised if there's much difference.
