my d3 team (rated only 507 due to 5 incoming freshman) just beat a d-1 SIM who is rated 563 by double digit points.... I believed personally my team would be strong this season, just low ratings due to the frosh -- but does this really mean anything as far as my potential this season?

well... first off, 65-56 = 9, so not a double digit win.

Also that is about one of the worst D1 teams you'll find, plus they are running press with no seniors, so the IQ's are low (and their ATH/DEF ratings suck).  Your team had to shoot nearly 55% for that win, which isn't realistic to keep up, nor can you expect every team you play to go 3-21 from 3-point range.  And if you don't take more than three attempts from long range consistently, human coaches are going to go negative def position on you.

You're set up for a decent season, but I wouldn't put any stock in that game.

thats kind of what I was thinknig.. as far as my team goes DEF wise -- I feel fairly confident in them, 7 players with a 45+ DEF rating (45 being my definition of decent)... I have high hopes but am bias
