Let say I have six freshmen the first year on a team. I redshirt one, he remains a freshman (but technically, he is at his second year). Can I recruit six other freshmen the next year or I need to get a 3,2,1 year player? On my chart, it would put me with seven freshman, one redshirted, 5 sophomores.

He would count as a freshman so you would only be able to recruit 5 others next season.  FWIW if you recruit an ineligible and he shows up he would count as a sophomore the first year he could play and you would be able to recruit 6 freshmen the next year, so when they were seniors you would have six "true" seniors and one 5th year senior, giving you 7 in that class.  Hope that helps.
