I think this is probably one of my biggest problems.

Would you rather schedule a "tougher" schedule or a relatively easy schedule assuming your going to have a good team?  I try to schedule weaker with rebuilds but still doesn't really happen.

So for example playing like a 50 SOS and going 10-0 in conf against all sims or going 6-4 with 15 SOS against majority humans, Iguess it depends on your conf, as its better to maybe play the 50 SOS and go 10-0 in non conf if maybe you only expect to go 10-6 in conf.  While having your SOS get better and a 6-4 might be better if you have an empty conf.

For scheduling good sims, I just look for a team with a bunch if Jr's with decent ratings or even sophmores with decent ratings or previously human coached teams that have a lot of those human recruits returning, also makes sense to schedule those heavy jr teams with empty conf as that inflates their W-L record and in the process your SOS?

I believe the projection report values wins over top 100 and top 50 in the RPI. So if you can find teams towards the lower ends of those ranges, that would be good. I'm not sure playing projected top ten teams is all that helpful for anything other than getting a sense of how good your team really is. 

In general, schedule the best teams you can beat. I do agree that it makes sense to schedule junior heavy sims in terrible conferences. 

Quick quesiton does W-L record of opp makes a bigger impact that their RPI?  So:

does  a 24-2 Sim with 95 RPI better impact your own SOS than a 19-7 50 RPI

The record means more for your RPI. The RPI may mean more for the projection report if they are within the top 50 or top 100 thresholds, but if it's 52 vs 95, I'm not sure how much of a difference it makes. 

You want to play the best team that you can beat.

So many coaches are no using the Jr heavy sim schedule that it is defeating itself.  If there is a team with solid Jrs in a mostly sim conference you may find 7-8 coaches have scheduled them non-con.  All of a sudden that team goes from a 20 win team to a 15 win team and their RPI is terrible because they went 1-9 in non-con
