I'm confused, after recruiting period, I was always able to redshirt a freshmen. What gives?

You will be able to redshirt him after the one day coach signups are over when your new roster is updated.

There seems to be a period where the world is in a "half-flipped" state. The World Schedule is at the very bottom, and it says next season has started. Some things look and operate like next season (depth chart, practice plan, game planning), but other things look and operate like it's still last season (changing player positions, redshirting, scheduling, recruiting).

when can I rescind a scholarship BEFORE the start of recruiting period 2?

On the date listed in the world schedule. Basically, after the championship game until the end of secodn session recruiting. (that was in reply to @taylorn)
