I'm new to this game. I just read about the 6 freshman maximum rule. Can I finish my recruiting first, and then redshirt or cut someone, or will the game cut off my recruiting when I have 6 freshman?

It will cut you off from signing another freshman after 6. You might want to look at some 2 year jucos to fill out your class.
