Scenario.... signing preference is the key here. Late signers will never sign in RS1. Always in RS2. Early/EoP1 signers look to sign earlier. Always pay attention to signing preferences when preparing your recruiting targets. I'm assuming you're division 3, so you'll want to learn more about when a D3 coach can sign players, related to the stage of recruiting that you're in.
1) recruits do not lose interest. All interest will remain the same for all schools involved no matter how many openings the competing coaches have. But keep in mind that the coaches that are pursuing along with you, they have the ability to see that your scholarships are full. And they will likely pursue the recruit even harder knowing that he's more available
2) the choices are all yours to make. But in a lot of cases, signing preferences will decide that for you.
3) you can offer as many as you want. But you can only fill the spots you have available, until you are able to make cuts
Bonus..... if you have two ships offered to two players that have the same signing preference, whichever one signs first is random. You can't control it. So be careful when offering ships if you strongly want one over the other.
