Anyone know what the non-con conference wins record is? Anyone ever seen a conference go 120-0?

The entire ACC in World Allen (around seasons 55-65) routinely scheduled all sims in non-conference play.
Not sure if they ever went 120-0, but I think they may have had one amongst those 119-1 and 118-2 seasons.

For sure.

It was also how they'd rack up an insane amount of extra cash. In 2.0, you'd get extra recruiting money for every game a team in your conference played in the post-season. They'd regularly get 10 or 11 teams into the NT. In 2.0, recruiting outside your teams 360 mile radius was nearly impossible because the cost of HVs/CVs skyrocketed beyond that distance. But ACC teams in Allen had SO much extra money they would regularly recruit guys 500+ miles away from campus without issue.

wasn't uncommon for an ACC team going 5-11 in conference to get a NT bid on the SOS and 10 non-conference wins.

But you're right that the extra $100k in conf bonus recruiting cash really helped. Especially when they choose not to recruit against each other.
