Last cycle Sim gave me a sophmore recruit but now he's NOT showing as an open scholorship or falling off this next cycle.. Why is that?

I'm guessing you have only 8 scholarship players. The sim will give you a 9th scholarship player, plus the three walkons to fill your 12-man roster.

While you get recruiting credit for the 3 walkons during the early recruiting session, you need to keep #9 on your roster all season and don't get recruiting credit the following season for that spot.
Once the second recruiting cycle begins after the season, you can rescind that scholarship and get the full recruiting funds for that spot immediately.
