If I trade a guy who I have signed to an extension with a bonus payable starting the next season, does the acquiring team acquire the bonus as well as the salary or am I stuck with the bonus?

You are stuck with the bonus. That should be reflected on the trade screen, in that only the salary money is leaving you and going to the other guy.
