Is a plus defense supposed to work against fast guards that do not take a lot of threes?

Generally, you'd want the opposite in that situation. Playing plus allows faster guards to get by your guy easier, but defends the 3 point shot more.

There's a lot more complexity to the +/- than that, but that's the basic answer to your question.
