Count me amongst the lazy group that just doesn't bother with it too much. By their senior season, my players end up maxed in 10-12 of 12 categories. Usually the ones who don't have all categories as low are the guards because I typically don't bother to put much, if any, time into low post. That's the last category to get maxed out.
What I haven't liked about potential is that it takes away from a coach's ability to put less time into offense and defense and more into core abilities. The hard cap being reached so easily means that everyone can put virtually the same amount of time into team practice and get IQs to be more equal. I felt I had an advantage in recruiting a player that already knew my Off/Def. I could put less time into team practice and get a better overall rating in core categories.
