Is there anyway to know if a player on an opposing team is hurt and likely to miss the next game? I've always assumed there wasn't but never saw a definitive answer.

Look under the Player Game Plan down at the bottom for the other team's distro stats

Yep, on your Player Gameplan page, if you scroll down to the doubleteam section, it'll tell you what his player's health ratings are. That's probably the easiest way.
