I can't seem to find the redshirt button. Can someone point me in the right direction?

on the "office" screen where your roster is. it will be on the right side. you can only redshirt a player if you have another season already paid for

I have another season paid for.

On the roster screen, i now see the word redshirt next to 1 player. Is that what I would click on to redshirt him. Or is that telling me he is already redshirted?

That means you can only redshirt one player. You have already played a game and 11 players got playing time so they are no longer eligible to redshirt. The only guy who you can do it to is the one who didnt play.
