Designate one of your bench guys, ideally a defensive minded SS, as your third catcher and put him in the defensive and rest hierarchies.

No, but if your DH is listed as your third catcher, and your primary catcher gets rested, the sim will skip over your second catcher and give the start to your DH instead.

maybe you wouldn't care late enough in the game, but if the DH takes the field, you lose the DH and the pitcher has to hit in that spot
