Have a young pitcher who played 2 seasons in the ML and then had a season ending injury so at the end of the season I demoted him to AAA.  If I leave him in AAA for the first 21 games will I avoid another year of service or once you have one season of ML service does that not matter anymore?

It depends on how many years/days of ML service he's already accumulated.

That's true.  Assuming he is at 2.008 (or 2.000) he will finish the year lower than 2.170 if you want 21 games.
