You can defend against the 3 with a + defense.

Play regular man to man against 3 point shooting team.

Make sure to have good defenders guarding these guys.

The better the rebounding team the higher the + . I've gone with +5 in the past. Weak rebounders maybe +1 or +2

*Also, just because they are a good 3 point shooting team, doesn't always mean you should change your settings. A team that only shoot 8-10 3's per game, there would be a difference of one three point field goal between a good and bad shooting team.

Man to man is THE best 3pt defense. really nothing compares to it in that dimension. I think its even better than the 3-2.

Agreed that m2m is the best against a 3-pt team. When I've had heavy 3-pt shooting teams in the past, I've always dialed it down when playing m2m teams. And somehow the 3-2, -5 always seemed to work well.
