The only restriction is that you can only use rookie seasons.

Alternately, the 'going away party' version - where you can only use a player's retiring season(IN other words, they have to have a season where they don't play afterwards, and no more seasons where they do play afterwards.

Just ideas I'm tossing around in my head.

the retiring season would be basically impossible - there are very few players who end their careers with years that are really SIM-useable. the rookie thing would be fun, but you should see if you can jazz it up a little...
