It is my understanding that defensive IQ is the major factor in players picking up fouls. Aside from IQ, what areas should be looked at to improve to minimize that amount of fouls your players pick up. Also, what defenses are best/worst as far as fouls go?

Well, if fouling OUT of a game is the problem, playing slowdown will decrease the chance of a foulout. . .

Fouling out isn't an issue, but if one team gets to the line 35+ times and another around 10 then that's a big advantage. I just wanna make sure my team stays on the right side of that. I've been good about it normally, but I'm not sure what outside of IQ directly affects it.

All the things that impact how good of a defender a player is - defense, athleticism, and speed - do seem to impact fouls.  It makes sense that better defenders don't get beat as often and don't have to foul as often.  To answer your other question, the press commits by far the most fouls and the zone commits appreciably fewer than M2M.
