I have a few arbitration eligible players that I have no interest in resigning for the amount of money they want. Do I have any option other than just releasing them? If I try to offer a lower amount in arbitration and the case is awarded to the player then I'm stuck with that salary, right?

You can try and trade them, release them, or you should be ok with the amount they are asking for because you will be tagged with at most that salary if you offer.

Yes you will be stuck with the salary. But if you release them, they will likely command more on open market in a lot of cases. So releasing them and trying to resign them may not work in your favor.
