why are all these players I demoted before the end of spring training still on major league contracts?

If they are on the BL roster at at roll over, they will make a BL salary. I always demote after I'm eliminated from the playoffs but before rollover.

Yep. Pre-arbitration players are on the books for the salary they're assigned at rollover. Only those demoted before rollover renew their contracts at minor league levels.
