I assume that since the P isn't referenced in the defensive league averages chart, it is the same as the C. So if a pitcher has 25 range and 45 glove, he is considered a good fielding P. Does this seem like it could be accurate?

I'd say yes. I have a guy about to win a Gold Glove, just checked and his range is 45 and glove 26. He could actually play first base, I guess.
