I informed a player i was going to redshirt him and he said he was going to take my school of his list but he went ahead and signed anyway, so does that mean i can redshirt him without any repercussions or will he get mad and leave?

Give him the redshirt and see how he takes it. You can always take it back if he gives you a poor reaction.

No. It won't Especially because if he doesn't like it, if you immediately take it off again it will be 'no harm no foul' - as long as you take it off before the real games start.

I have had several sophs take a RS, but the vast majority have rejected

RS away, if you hit the button and didn't promise a start later or do anything "funny" to get him to sign, he has to take the RS. If he has the RS icon on his profile, he's gonna take it 100%

I have had jr take a r/s butI feel its pretty random. And Like I said above and zags did your golden

I have redshirted sophs the last two years with mixed results. In season 41 I waited to the very end and the player lost 29 work ethic. In season 42 my soph said he thought it was a good idea with no negative impact. I am still learning.

I've redshirted a bunch of sophomores. There have even been a couple of times when I was able to redshirt a sophomore after he turned it down his freshman year.

If you informed the player during recruiting that you intended to RS him and he signed then he will take the RS with no problem. Also, if during recruiting you offer the RS and he sends you a nasty email response - as long as he continues considering you, you are golden.
