My team in Div 1 has played half court press/man to man for the past 4 seasons. Now that I have 6 new players this season, I was thinking about switching to just man to man.  One reason is because I'm worried it will take too long for my guys to learn two defenses and the second reason is half court press/man to man just hasn't seemed as effective the past 2 seasons.

Any input would be appreciated.

I'd go to straight man for the simple answer that with 6 freshman, you can put, and use, all those extra valuable practice minutes into improving your individual skills more quickly.
