I have a player with 3 years of options that I want to demote from ML to AAA.  He's obviously already on the 40 man roster.

I read that "If the player spends 20 or more days on optional assignment in the minors, one of his remaining option years will be used."

what does that mean?  What is "optional assignment"?

An "optional assignment" is exactly what you are looking to do . . . assign a player with options to the minor leagues.

so if I demote said player and keep him in the minor for the remainder of the season, he is going to lose an option year anyways?  What about the following season if I still keep him in the minors?  Would that use up another option year?

Yes.  Every season on the 40 and in the minors = a loss of an option year.

Doesn't really matter though because as long as you keep him on the 40 man he will never become a minor league FA (in the game, not in real life).

True, but if and when you do bring him up to the majors again, you'll have to expose him to waivers if he's burned up all his option years and you want to demote him.
