We're still in fa/coach sign period and most of my players are willing to re-sign long term.  Is there a point in the season that anyone has noticed players change their mind and "wait to talk in the offseason"?

That determination depends on  their overall rating (among other things like patience, etc which won't change). So as long as the player doesn't have any ratings increases over the course of the season, you should be fine.
