If you play M2M, have your best defenders guard the opponent's players with the higest distro. Look at their points-in-the paint to determine +/- . If they score less than 40% of their points inside, play a + defense. I would reduce this by 1 if the are a better overall rebounding team than you. For instance, if the score 38% of their points in the paint, play a +1. Then, if they are a better rebounding team based on their overall rebounding rating, play them balanced. If you are better at rebounding, leave as is. I rarely play a - defense unless they score more than 45% of their points inside or they are better overall rebounders. Play a +2 if PIP is less than 35%, +3 if less than 30%, etc. HD is geared more to guards and SF and most teams like to shoot the 3. Set your +/- to adjust no matter what. Don't DT unless they only have 1 or 2 guys getting all the distro. Do not short change yourself in speed/ath/def when recruiting, even in bigs.
These are only my opinions and I've never won a NC. However, I am able to hold my own in the ultra-competitive BE in Wooden. You should probably sitemail some very successful coaches who probably don't want to post exactly how they gameplan.
