I was pleasantly surprised with what I found, my two teams have the following pitching lines:
1,301 IP, .225 OAV, 1.05 WHIP, 2.14 ERA
1,301 IP, .232 OAV, 1.08 WHIP, 3.02 ERA

Granted, that's RL and doesn't include normalization. With that factored, they're really close to the same # stats in those categories.

I will try this. FYI - I think there is a measurable difference between 1800's pitchers and 1900-1910's pitchers. My guess is that most folks will take 1900-10's pitchers.

Completely agree, and I think that's born out in the stats. the excluded deadball years of 1885-1887 have OF FLD% of .880, .883, and .891. From 1888-1899 that ranges from .907-.944. from 1900-1919 that range is .937-.965. I also think that the majority of deadball pitchers people encounter in OL (the main area of complaint against deadball pitcher value) mainly features guys from the range selected, and also mainly guys from 1902-1919. I know I could've pushed the extreme variance more, but I also wanted to try to reflect OL experience to a degree.

Also, do we want to use any Mop-ups? Or would that skew the #'s?

I think build the team how you see fit for each team. mop ups are a part of that for my team, but others may not for theirs

Draft your team as you see fit. It’ll likely screw up some #s a little (mostly in regards to HR data), but we should be able to parse that out. If you’re using them for both teams it should also balance to an extent.
