After we draft a player, we must use that exact version of him on our roster -- and not even a less expensive version of him?

Correct. For example, you are not allowed to use the 1915 Benny Kauff, only 1914. This is to prevent a situation where someone could draft some more expensive season of, say, Bob Milacki, and then both have the ability to use 1988 Milacki and have a higher salary for their next pick(s).
