You're essentially correct on your analysis of my squads, which is that I didn't really have the players to make one or two super teams so I went for the 5 team bonus. Bird is playing some SG in a couple seasons - somewhere between 20-26 minutes depending on how many Bobby Jones minutes I use at SF and how much Ge Wallace has coming in at SG behind Bird. I've heard some say they don't like taking a percentage hit on higher usage guys, and I've always agreed with that and usually only push guys down positions who are 97 or 98 percent. But that approach has only won me one champ in Savage and one in ODL so I decided to push it. It was also situational. I didn't draft Bird planning to play him at the 2, but wanted to focus on prioritizing shooting a little higher in this draft than I'd done in the past. So when Jones was available in the early 3rd I decided to take him and the great shooting, plus needed D besides mediocre Bird and Gilmore. You correctly identified the guy I was planning to pick in your "if I had to do it over again pick segment" as Simmons. He was the guy, but as mentioned switched late to better shooting and D. I also told myself I should target more 3's than I have in the past, although I certainly didn't make good on that drafting Rondo and Ge Wallace.
Looking back at the draft if I go Simmons with Bird and Gilmore I could and probably would have still gone Ge Wallace in the 4th and then in the early 5th I'd have been left with probably either Willis Reed if I wanted to load up on D, or maybe your boy Jarrett Allen and start piecing together my PF's. I think maybe the Jarrett Allen with Sabonis and Ayton along with Ben Simmons is probably a better team.
