Once you have a player on your roster, is he yours to keep as long as you choose, until his career ends?

Even after the random draft orders reset after 10 seasons, the owner who has Willie Mays for the 50s, will he still be able to keep him during the 60s as his career progresses?

Yes. Every player you draft / keep will progress one season at a time. If you draft Mays he is yours to keep.
