I am curious: if a player gets enough experience at a position they are not listed at, is it possible for that player to change positions? So, if a defender has 1 bar of D experience and gains 2 bars of M experience, do they become a midfielder?

I believe so. It might not change on their player card but you're fine to use the player as such.

Just a note, you can play anyone at any position regardless of what it says their official position is. I have done with great success
